Vegetarian and Side Dishes

My family has reduced our intake of meat substantially over the last two years. On average we have three or four vegetarian days a week. We still eat meat, but only occasionally. This change has helped us to feel better physically and we also feel better morally. If everyone reduced their meat intake by 70%, imagine the impact that it would have to the environment. While I don't eat as much meat as I used to I do still enjoy good burger now and then.

I don't think that we have to pigeon hole or label ourselves as vegetarian or carnivore. I like to do both. Some people have described this way of eating as flexitarian (we love labels). I guess this comes closest to how my family and I eat.

Roasted Lemon Oregano PotatoesJust like from your favourite Greek restaurant. The secret is to partially cook the potatoes before roasting them. There, I've done it, everyone knows now. Seriously, boiling the potatoes for 6-8 minutes before baking them changes the texture completely. Watch me make them on You Tube.









Balsamic Grilled Veggies. The best side so serve with any grilled meat. Or keep it vegetarian and add cooked quinoa. Make extra and make a frittata the next day. YUM!
